This chapter discusses dietary services. Food is the basic requirement of every living being. Good food is a human weakness. In hospital people do not go to have food, but if the hospital caters to the need of the patient, visitors and hospital staff in the same manner, in which it is served in good hotels, it adds value to the services. The food services department may be owned by the hospital or it may be on contractual basis or what is popularly known as out sourcing or public private partnership (PPP). The department should have close proximity to the materials management department. Every hospital will have a written policy statement regarding type of food service, type of people, who will be served food, type of food, menu, etc.
