The book “Food and Nutrition for Nurses” presents a complete and compact document of Nutrition, coupled with the supporting materials and study questions. It unfolds the root cause of several diseases and how to impede it nutritionally, thereby bridging the gap between the knowledge of nutritional science and its clinical application. The entire book is divided into five units; beginning with introduction of nutrition that covers the history of nutrition, highlighting the landmark discoveries made in the field of food, nutrition and health. The second unit, Foundation of Nutrition elucidates the function of nutrients in the human body and how the nutritional knowledge can be applied through the nursing process. The third unit, Nutrition in the Community delineates the family and community nutrition with an overview of various vitamin deficiency disorders along with effective ways to tackle them with the help of nutrition. The assessment of nutritional status, importance of balanced diet and therapeutic nutrition with some examples of therapeutic diets, such as diabetes and hypertension are well discussed in the fourth unit, Nutrition in Health Care. The concluding unit, Cookery Rules and Preservation of Nutrients describes different methods of cooking, storage of foods and preservation of nutrients, while briefly covering other related topics such as food toxicity, food additives, etc.
