Abstract

Edible oils are one of the major contributors of dietary fats. Cooking oil plays an important role in the Indian diet and therefore the right choice of edible oil is essential for maintaining good health. Design of oils which will be suited for Indian cooking conditions (high temperatures throughout the cooking process) is needed. Free radicals are generated during normal metabolism; their generation can be accelerated by environmental factors. Thus it is essential that diet has sufficient amount of antioxidants. Different oils contain different amounts of various antioxidants and a blend of oils may prove to be a source of varied antioxidants.
