Abstract

Nutrition may be defined as the science of food and its relationship to health. Classification of food is done according to origin, chemical composition, and function. Organic and inorganic complexes contained in food are called nutrients. They are mainly categorized into macronutrients, and micronutrients. Of the total, 99% of the body fat in the adipose tissue is in the form of triglycerides. Carbohydrate is the main source of energy. Vitamins are organic compounds that are regarded as essential nutrients. They are needed by the body in very small amounts and hence are known as micronutrients. The dietary reference intakes (DRIs) are quantitative estimations of nutrient values to be used for planning and assessing diets for healthy people. The daily nutrient intake value is estimated to meet the needs of half (50%) of all healthy people in a life stage and gender group. Dietary guidelines including nine interrelated focus areas are described. Role of carbohydrates in dental caries, food safety, importance of nutrition in preventing periodontal diseases, pregnancy and lactation nutrition, are discussed briefly in this chapter.
