Abstract

The aim of this chapter is to focus on the qualitative analysis of carbohydrates. Carbohydrates are defined as polyhydroxy alcohols with an aldehyde or ketone as the functional group. Carbohydrates are classified according to the number of sugar molecules in them as monosaccharides, oligosaccharides and polysaccharides. This chapter covers the functions of carbohydrates, reactions of carbohydrates, tests for carbohydrates, and intensification of unknown carbohydrate. Carbohydrates are the main source of energy in the body, storage form of energy (starch and glycogen), excess carbohydrate is converted to fat, glycoproteins and glycolipids are components of cell membranes and receptors, and they form structural basis of many organisms.
